INGREDIENTS FOR QUINOA MEATBALLS
150g cooked lentils
2 tablespoons flour
1 teaspoon parsley
1 teaspoon garlic powder

Prepare the quinoa dumplings. First wash the quinoa and then place them to cook twice with water (400ml) and a little bit of salt. We leave until the quinoa absorbs all the water.
While quinoa is making, cut the onion into small cubes and let’s go with olive oil and a pinch of salt and pepper over a low heat until it is soft and start to take a color.
We crush the lentils with a fork and then add the onion and mix well. When the quinoa is ready, we add and mix it well. We put the garlic, the parsley and a little more pepper and mix. In the end add the 2 tablespoons of flour and knead (You need to do it with your hands). You will see that it is a thick mass and a little sticky. We let her rest for 40 minutes in the fridge so she nods.
While we prepare the tomato sauce. I simply pick the onion, and then add the five grated tomatoes. Add a little salt. Boil gently for about 25 minutes until it starts to get good color and thicken then grind to make it more homogeneous
For this time the dough for the meatballs will be ready. We make balls and we put in the tray of the oven with baking paper so that they do not stick. We put the oven preheated to about 200º and let them do about 15 minutes, until they start to brown.
