Quinoa Risotto with Mushrooms

Ingredients for 4 people:

 
2 glass of quinoa
15 mushrooms – sliced
5 onions – cut into squares
4 tablespoons white almond cream
Chopped fresh chives
Dried basil
5 tablespoons soy sauce
Olive oil and salt

Quinoa Risotto with Mushrooms

Preparation:

Put the quinoa in a pan and fry a few seconds stirring quickly. Add 3 glass of water, and pinch of salt, and cook on minimum heat for 25 minutes.

 

Briefly, sauté the onions with a little olive oil for 25 minutes on low heat. Add the mushrooms, the dried basil, the soy sauce, and sauté for 7-10 minutes. Add the quinoa and chopped chives, sauté for 5 more minutes.

 

Mix the cream of almonds with a little boiling water, and then mix it well with the quinoa.

 

 

 

Notes: When serving risotto you can cover it with the grated cheese and for the vegan’s vegan cheddar cheese.
