Best vegan couscous salad
Couscous salad is a very simple salad to make, with a fresh taste and rich with excellent nutrients and antioxidants. You can prepare it for any occasion, a dinner with family and friends, and even for carrying to work.
INGREDIENTS (4 people)
300 gr couscous integral
2 red peppers
Cook the couscous by the package directions. Once done, remove the couscous and let them cool.
Chop the carrots, avocado, red pepper, lettuce, parsley, and onion.
Mix vegetables with the couscous. Season with the lemon juice and a little olive oil.
