Raw Vegan Cheesecake with Strawberry Jam

No-bake Vegan Strawberry Cheesecake Recipe
Ingredients for the base
1 cup almonds
3 tsp of organic cocoa
1 cup of dates pitted
1 tsp of liquid organic honey
Ingredients for the Cream Filling
3 cups cashew nuts
1/2 cups of coconut oil
1/2 cups of coconut milk
3 tbsp. of honey (or other healthy alternatives to sugar: maple syrup, agave syrup, etc.)
1/2 cups cocoa butter
4 drops of vanilla extract
Ingredients for Topping
1.5 cups of strawberries jam or other fruit jam
How to Make Vegan Cheesecake with Strawberry Jam
Grind the powdered almonds in a blender or food processor.
Add the cocoa, honey, and dates and mix until smooth.
Distribute over the bottom of the mold (mold is 20×20)
Cream Filling Preparation
Soak the cashew nuts for 5-6 hours, and then mix until a homogeneous cream is obtained.
Add the coconut milk and cocoa butter, and then add honey and vanilla extract.
Then mix until a smooth and homogeneous consistency.
Spread into the mold over the bottom and smooth the surface.
Put the mold with cheesecake to cool for 2 hours in the freezer.
Take out the cheesecake from the freezer and carefully spread strawberries jam (or make a strawberry puree with a blender) over the surface of the cake. Then let the cheesecake cool for 3-4 hours in the freezer for the cream to take the right consistency.
